Turning Green

A few months ago, we watched a movie called "Fat, Sick and Nearly Dead". It is based on the health of Joe Cross. He maintained unhealthy eating habits and nearly died. He turned to juicing. Juicing vegetables and fruits. The movie inspired me to get healthy again. I say again because a couple years ago, my husband and I were eating very healthy and not drinking any alcohol. We did it for health reasons. We fell off track by eating whatever and drinking whatever. Needless to say, we gained weight and do not feel good at all. We decided to start again. We are eating mostly vegetables, fruits, nuts and very little meat. Actually the only meat we eat is chicken.

I recently purchased a juicing machine. It works really well. So well that the pulp is dry, very dry. I decided not to just juice, like Joe Cross did. My goal is to incorporate juice into my diet to ensure I get enough vegetables and fruits in my body. I know I won't eat enough of these foods. I've been trying food combinations that I never thought I would enjoy. Kale is one of the main vegetables I have been using. It is so good for you. It's green. Green vegetables are very good for you.

In order to start my juicing venture, I went to Joe Cross' "Reboot" website. It is full of great information. There are recipes for juices, smoothies, snacks, soups, main courses, salads, etc. one juicing recipe I really enjoyed is called "Mean Green Juice". It was delicious. The morning I drank this, I woke with a headache. I could not get rid of it. I kept moving and made this juice. Within the time I was drinking it, the headache went away. I felt better and my energy was back.

Here is how to make this delicious, healthy juice.

  • Mean Green Juice
  • 1 cucumber
  • 4 celery stalks
  • 2 apples
  • 6-8 leaves kale
  • 1/2 lemon
  • 1 tbsp ginger
  • Wash all the produce well. Peel the lemon, optional. Juice. Pour over ice and enjoy.

I did not have a lemon, I used an orange. I also use all organic food. Unfortunately we are buying our produce. Garden season can't come soon enough.
